Soan Mitate | Soba Restaurant in Azabu-Juban, Tokyo

Freshly milled. Freshly made. Freshly boiled.
Soan Mitate stands at the foot of Mt. Azabu, on the slope known as Daikoku-zaka. The name “Mitate” comes from the three principles of soba: freshly milled, freshly made, freshly boiled.
The restaurant is run by Yamayuki, a group known for wholesaling tuna, and it serves a course that pairs prime tuna with handmade soba and Champagne.
The buckwheat flour is chosen dish by dish and the noodles are made to order. The broth is built from dried tuna flakes and Rausu kelp.
Course Course
A single Chef's Tasting Course pairing Yamayuki's tuna with handmade soba and Champagne. The details shift slightly with the season's ingredients.
Soba Soba
Handmade 100% buckwheat soba, made with heirloom varieties from Fukui and Toyama prefectures, chosen dish by dish and kneaded to order.
